Description
A vinegar made with wine that was initially between 10 and 15 years old, to which we must add another forty years to gradually convert the alcohol into acetic acid. Its acetic grade is above 11, an outrage, and it maintains almost 3.5% alcohol. Vinegars like this are often used to give character to younger ones, but Equipo Navazos has bottled it as is, without lowering it at all. Very dry, of course, as is true of true Sherry vinegar. A spectacular vinegar, ideal to perfume dishes with just a few drops. On the other hand, it will be unrepeatable, of a single "bota" whose void will then probably be filled with vinegar from its sisters to turn it into a kind of "Bota Punta" or perhaps with vinegar a little younger. Everything is possible. But this Bota 106 de Vinagre Viejo de Jerez is simply unrepeatable.
