The PX Barbadillo Vinegar is made with the base of Manzanilla Sherry Vinegar and is aged with Pedro Ximénez wine. It spends more than 5 years in oak barrels, which provides a characteristic sweetness of the PX, very attractive. It is perfect for dressing sweet and sour dishes, as well as accompanying cured cheeses or fatty sausages. It also works well for caramelizing vegetables.
