In the 1950s, José Coalla worked alongside his uncle José Cimavilla in a seaside neighborhood. It was there that he discovered his passion for running a shop, for wines, and for preserved foods. This experience led him to open his own store, which today has also evolved into this online space. Our preserves could not bear any other name, as a tribute to Uncle José Cimavilla.

José Cimavilla Preserves represent the origin and essence of Coalla Gourmet. Their history dates back to the 1950s in Gijón, when José Coalla began his journey in the world of delicatessen and preserved foods alongside his uncle José Cimavilla.
That small grocery store in the heart of Gijón marked the beginning of a project that has since grown into a gastronomic reference with stores in Asturias, Madrid, and an online platform.
