High-altitude vineyards and varietal diversity
The winery operates on estates between 800 and 1230 meters above sea level, with extreme climates and unique Pyrenean soils. Organic viticulture governs all processes, from pruning to harvest. Varieties include Riesling, Albariño, Sauvignon Blanc, Semillon, Chardonnay, Chenin Blanc, Pinot Noir, Syrah, Cabernet Sauvignon, Merlot, Petit Verdot, and Garnacha Tinta. Each plot is vinified separately to maintain its distinct character, resulting in balanced wines that capture the harmony of the Pyrenean landscape.
Winemaking history and tradition
Castell d’Encús has a viticultural heritage dating back to the 12th century, when Hospitaller monks of the Order of Saint John settled here. Nine stone tuns carved into rock are still used for fermentation with wild yeasts, blending history and technology. This legacy produces honest, authentic wines deeply connected to the landscape and the passage of time.
