Olga Verde, winemaker and viticulturist, worked in renowned wineries throughout Spain before launching her own wine brand. She now has a fantastic project in her hands: The recovery of the old vineyard and its soils that cover the northern slopes of Otero de Toral, (a small mountain town near the Villa de Corullón).
Olga uses traditional techniques and carefully selects the grapes to achieve a unique and exceptional wine.
In this project, production barely has any weight; What truly matters is that the wines express the essence of a mountain vineyard maintained for decades by hundreds of anonymous winegrowers, the essence of a vineyard in cool areas that in warm vintages like the one we are experiencing has many things to offer.

A peculiarity of Bierzo wines is that they are made mainly from the Mencia grape, a native variety that is grown almost exclusively in this region of northwest Spain. Mencía wines are usually fresh, aromatic and with balanced acidity, with notes of red fruits and a touch of spice. Three of their wines are made with this variety. Discover more about each of them:

A Villa wine from 7 small plots dotted on the northern slopes of Otero, together they add up to 0.8 hectares.
It has been made respecting the varietal composition of the plots, with 30% whole bunches and 70% destemmed grapes.
It was made in an artisanal way, trying to convey the north from which it comes.
Toxo is fresh, wild and also delicate, like its flowers.
Villa wine from the district of San Clemente. Toxo is the neighbors' wine, made with the grapes that Manolo and Carmen care for with love and dedication.
Made with grapes from the La Madroñal plot, respecting the varietal composition of Mencía and Merenzao. It was made with 30% whole bunches and the rest destemmed.
It was left to ferment in its own air, without touching it too much, and then transferred to barrels for 9 months to finish refining.
Wine from a single plot of 0.3 hectares in the heart of the Salnés valley, Barrantes.
Planted about 30 years ago by the family, harvested by hand and made in an artisanal way.
It is a pure wine, an old-fashioned Albariño. Saline, fresh and round, with the vintage very marked by a voluminous and long mouthfeel.
Wine from a place located in the municipality of Corullón. It comes from a single plot of 0.10 ha, nestled under the vestiges of an old lime pit.
It was made by hand in an open tank with 100% whole bunches.

«TOXO: If there is something characteristic of the area of Galicia and some areas of El Bierzo, it is Toxo, a plant that used to be used for everything, a “weed” that has thorns and a delicate flower that populates all the cliffs and paths, with a spectacular variety of green and yellow colors.
The toxo branch is made up of infinite green spikes and its flower, called "chorima", floods the path with color. Its fruit is a gray pod that, in the hot season, if you are silent, you can hear it burst, releasing the seeds up to 5 meters from the mother plant. "It is the first plant to emerge after a fire, which is why it is said to be a plant with character, resistant and explosive."
