The winery and the origin of the project
Fabio Coullet Winery was born as a personal project driven by a passion for agronomy, winemaking, and the territory of the Málaga Axarquía.
The project aims to craft unique wines from native grape varieties, deeply influenced by the region’s complex topography, the different orientations of the vineyard plots, and its warm Mediterranean climate.
Fabio Coullet and his philosophy
Fabio Coullet, an agronomist and wine enthusiast, has more than twenty years of international experience in the wine industry.
His project within the D.O.P. Sierras de Málaga is based on the connection between landscape, traditional grape varieties, and the people who have preserved the viticultural culture of the Axarquía for generations.
His philosophy is rooted in sustainable and organic viticulture, applying minimal intervention practices both in the vineyard and in the winery.
Axarquía as a wine-growing territory
The Axarquía, located east of Málaga, is one of Spain’s most unique wine regions.
The landscape is shaped by steep mountains, slate soils, and a Mediterranean climate influenced by the nearby sea. These conditions create numerous microclimates that bring complexity and personality to the wines.
The vineyards can reach slopes of nearly 70%, meaning much of the work must be done manually or with the help of mules — a traditional symbol of effort and perseverance that appears in the winery’s visual identity.
H2 Native grape varieties and heroic viticulture
The winery mainly works with traditional local varieties such as Muscat of Alexandria, Pedro Ximénez, Doradilla, Garnacha, and especially Romé.
Romé is an almost extinct grape variety, with only a few hectares remaining in Málaga and worldwide, making it one of the project’s most distinctive elements.
The combination of native varieties and heroic viticulture defines the identity of Fabio Coullet wines.
Winemaking and wine style
At the winery, wines are produced using minimal intervention methods, aiming to preserve the purity of the fruit and the identity of each grape variety.
The intention is to create honest wines that faithfully express the landscape, the grapes, and the personality of the winemaker himself.
Historical wine tradition in Axarquía
Wine culture in the Axarquía dates back to Phoenician times, around the 6th century BC. Since then, viticulture has remained deeply connected to the cultural and agricultural identity of the region.
Historically, the area was renowned for its sweet Muscat wines, although today dry wines are also produced, offering a more contemporary and authentic interpretation of the territory.
