The François de Nicolay project originates within the historic Domaine Chandon de Briailles, a family estate established in Burgundy in 1834.
With vineyards in Savigny-lès-Beaune and Pernand-Vergelesses, the work has always been guided by a single idea: expressing the authenticity of terroir through Pinot Noir and Chardonnay.
Biodynamics as a way of understanding the vineyard
In 2005, the domaine made a decisive shift toward biodynamics, achieving Demeter and Ecocert certification in 2011.
Vineyard work follows a holistic approach: respect for natural cycles, soil balance, and the use of horses for ploughing to avoid soil compaction and encourage microbial life.
