A family deeply rooted in Burgundy

The François de Nicolay project originates within the historic Domaine Chandon de Briailles, a family estate established in Burgundy in 1834.

With vineyards in Savigny-lès-Beaune and Pernand-Vergelesses, the work has always been guided by a single idea: expressing the authenticity of terroir through Pinot Noir and Chardonnay.

Biodynamics as a way of understanding the vineyard

In 2005, the domaine made a decisive shift toward biodynamics, achieving Demeter and Ecocert certification in 2011.

Vineyard work follows a holistic approach: respect for natural cycles, soil balance, and the use of horses for ploughing to avoid soil compaction and encourage microbial life.

The goal is not to intervene less, but to intervene better.

Healthier vines, more precise wines

The working philosophy is based on constant observation of the vineyard.

Over time, the vines show greater balance, improved phenolic ripeness, and a clearer aromatic expression.

This translates directly into wines that are purer, more tense, and better able to reflect each individual parcel.

Maison de Nicolay: expanding the concept

The Maison de Nicolay project extends this philosophy beyond the family estate.

It works with grapes and must from neighbouring vineyards that are biodynamic-certified or in conversion, always selected with strict criteria during harvest.

The objective is clear: to maintain the same identity of purity, even outside the estate’s own vineyards.

Winemaking without intervention

In the cellar, the approach is radically minimalist.

Spontaneous fermentations, no added sulphites, no filtration, and no aggressive pumping over.
The wine is made with as little manipulation as possible to preserve its natural energy.

Ageing takes place in old cellars in Savigny-lès-Beaune, where the wines evolve slowly until manual bottling.

A very pure Burgundian style

François de Nicolay’s wines are defined by precision, tension, and their ability to express origin without interference.

They are alive, refined, and deeply connected to the soils from which they come.
