CODESA specializes in the production of salted anchovies, Cantabrian anchovy fillets, and gildas (anchovy pintxos). For this, they exclusively use anchovies (Engraulis encrasicolus) caught at dawn during the spring season using purse seine nets, a selective, ecological fishing technique that respects the marine environment. The raw material is selected directly by the company itself in the ports of the Cantabrian Sea, acquiring only the largest and highest quality batches.
Artisanal Production and Cellar Curing
After selection, the anchovies undergo a salting and curing process in our cellars for an average of one year. Once this stage is complete, expert Cantabrian filleters transform the salted anchovies into delicate fillets, following traditional and artisanal methods. Throughout the entire process, quality takes precedence over quantity, ensuring a final product with a firm texture, balanced flavor, and gastronomic excellence.
