A story born in the heart of Jerez

González Byass was founded in 1835 in Jerez de la Frontera, when Manuel María González Ángel established a small wine house with the ambition of taking the name of the city to the world. Shortly after, Robert Blake Byass joined the project, giving rise to a partnership that would shape the winery’s international development.

From its origins, the house grew closely tied to the international trade of Sherry wines, becoming one of the major references in the sector.

Tío Pepe as a symbol of Sherry wine

The winery’s most iconic wine is Tío Pepe, a Fino produced under the traditional system of soleras and criaderas and aged under a veil of flor.

This wine has become one of the great symbols of Spanish wine, representing the fresh, dry, and delicate style of Fino Sherry worldwide.

The solera system and biological aging

González Byass is built on the criaderas and soleras system, a dynamic aging method that maintains continuity of the wine over time.

In the case of Finos, biological aging under flor yeast adds freshness, saline notes, and a very distinctive texture typical of the Jerez region.

A universe of styles within Sherry

Beyond Fino, the winery produces a wide range of Sherry wines including Amontillado, Oloroso, Cream, and sweet wines such as Pedro Ximénez.

Each style reflects different aging processes and either oxidative or biological evolution, making Sherry one of the most complex winemaking systems in the world.
