Domaine d’Aurensan: pure winemaker’s Armagnac without artifice

Domaine d’Aurensan is a family Armagnac house located in Cassaigne, in the heart of the Ténarèze area, in Gascony. Its proposal moves away from the large industrial models of the spirit world to defend a much more precise, artisanal and origin-driven idea: making winemaker’s Armagnacs, born exclusively from its own grapes and patiently aged on the estate.

Since the end of the nineteenth century, the family has worked as proprietor-growers, caring for its vineyard and controlling every stage of the process. They do not buy grapes or eau-de-vie from third parties, something especially important in a category where négoce is common. At Domaine d’Aurensan, every bottle is born from a direct relationship between land, vine, distillation, wood and time.

A family house in Ténarèze

Domaine d’Aurensan is, above all, a family house. Its vineyard extends over more than 8 hectares of clay-limestone soils in Ténarèze, one of the historic Armagnac areas. There, the work is carried out according to the rhythm of the vine, with special attention to pruning, vine longevity and the natural balance of the plant.

The aim is not to produce a standardized Armagnac, but to capture the singularity of each batch, each vintage and each composition. This vision makes Aurensan a different maison: closer to the world of single-plot wine than to that of uniform spirits.

Winemaker’s Armagnac: from vineyard to bottle

The great difference of Domaine d’Aurensan lies in its status as a producer-grower. Its Armagnacs come exclusively from the estate’s grapes, with no external purchases of harvest or eau-de-vie. This independence allows total traceability and a much more honest expression of origin.

The grapes are harvested when they reach the ideal point for distillation: with good acidity and a reduced sugar level. Then natural vinification begins, without adding oenological products such as sulphur or chemical yeasts. This way of working seeks to preserve the raw material and maintain a direct connection between the base wine and the future Armagnac.

The most recognizable philosophy of Domaine d’Aurensan is its “Triple Zero” approach: zero reduction, zero sugar and zero colouring. This means that its Armagnacs are bottled without additions intended to disguise, soften or standardize the final product.

When no water, sugar or colouring is added, the Armagnac must stand on its own: through the quality of the grape, distillation, ageing and the selection of each batch. The result is purer, cleaner and more expressive spirits, with a very defined aromatic personality.

Slow ageing in traditional pieces

The cellars of Domaine d’Aurensan have high humidity, a condition that encourages slow and progressive ageing. Its eaux-de-vie age in traditional 420-litre Armagnac pieces, made from the wood of oak trees from the estate itself.

Wood does not act simply as a container, but as a fundamental element in the aromatic construction of Armagnac. Over the years, the spirit extracts compounds from the barrel that bring complexity, texture, spices, dried fruits, depth and balance.

The 10 historic Armagnac grape varieties

Domaine d’Aurensan has a unique singularity: its vineyard brings together the 10 historic grape varieties authorized for Armagnac distillation. In addition to Ugni Blanc, Colombard, Folle Blanche and Baco, the maison has worked to recover six almost disappeared varieties: Meslier Saint François, Plant de Graisse, Mauzac Blanc, Mauzac Rosé, Clairette de Gascogne and Jurançon Blanc.

These varieties, known as “ghost grape varieties”, are part of the historical memory of Armagnac. Recovering them is not only an agricultural gesture, but a way of reconnecting with the original taste of the region and expanding the aromatic richness of its spirits.

Le Carré des Fantômes: tradition and innovation
